Just got done pickling a fresh batch of peeled organic garlic. If you have never tried it, it's awesome... Anyway, waiting for it to cool down now so I can stick it in the fridge. It's takes about 3-weeks to cure. I use dill pickle seasoning with the salt already in it, then some chili flake along with whole dried chili peppers as well. I like a spicy bite to it at the end. What you do is boil water first and throw the garlic in and stir for about 5 minutes max. Then scoop the garlic out into the jars. Then boil white vinegar mixed with a little fresh water along with the seasoning and peppers and just bring it to a boil. Let it cool for a few minutes and pour into the jars with the garlic. Then turn the jars upside down a shake a few times off and on while they are cooling down and then throw them in the fridge. .
